I·ATE: Grießbrei or semolina pudding, a delicious dessert

I-ATE semolina

Semolina pudding or semolina porridge (English) is made from semolina which is cooked with milk or water and is quite similar to pudding. After being cooked, it can be served warm or cold. Being a kid-oriented dish in many countries, it will bring you back to your childhood! 😉 Variety of toppings can be used depending on a country.

In Austria, Grießbrei is usually served with a square of chocolate or chocolate powder. The same dish known as griz or gris, which comes from a German word Grieß, is widespread in Bosnia, Croatia, Slovenia, and Serbia. Krupičná kaše in the Czech Republic and krupicová kaša in Slovakia are served warm with cocoa, but other variations such as honey, cinnamon or Tuzemák (Czech rum) are also used.

Furthermore, in Bulgaria griș cu lapte and terci de grișul in Romania are often served with added raisins, candied fruit or jam as breakfast. In Ukraine, Belarus, and Russia this dessert in known as mannaya kasha as well as in Poland as kasza manna and is commonly eaten for breakfast as a porridge. It is served hot with butter or jam. In Baltic and Scandinavian countries a semolina pudding, mixed with berries, is particularly popular during the summer time. If you want to taste this delicious treat order klappgröt (in Sweden), vispipuuro (in Finland), mannavaht (in Estonia) or uzpūtenis (in Latvia). If you travel to Sweden don’t miss out on their amazing version of this dessert which is named mannagrynsgröt which is another version of their klappgröt. A slightly different type of this dessert, a non-fluid one, is possible to make with only four simple ingredients: semolina, oil or butter, sugar and water, which results in delicious taste. It is called χαλβάς (halvas) in Greece and Cyprus, helva in Turkey, halva in Bulgaria and Iran as well as chałwa in Poland. You can find it even in Pakistan and India! Halwaua e Aurd Sujee is a sweet dish made from semolina, popular in North-West India, Pakistan and Afghanistan. Dried fruits such as dates, raisins, or nuts are often added to this tasty speciality to enrich the flavour. The picture below shows traditional Indian Halwaua e Aurd Sujee.
